The vineyard is located between 380 and 400 meters above sea level, and once ripe, the grapes are harvested entirely by hand and carefully selected. Alcoholic fermentation takes place in stainless steel tanks thanks to the sole presence of indigenous yeasts, accompanied by 15 days of maceration on the skins. Once the fermentation process is complete, the mass remains to mature on the fine lees in stainless steel for 18 months and, once the racking operation has been carried out, spends an additional year, again in stainless steel.
