Since 2018, the entire estate has been certified organic.\u003c\/p\u003e\u003cp\u003eVite ad Ovest “Bayt” is a 100% Grillo made from vines cultivated according to certified organic farming principles in the contrada Baiata area, within the territory of Marsala. The vineyard is 15 years old and grows on soils composed of calcarenite and sand, situated at an altitude of 100 meters above sea level. Following the manual harvest, which takes place during the second half of September, the grapes undergo\u003cstrong\u003e two days of skin maceration\u003c\/strong\u003e. Alcoholic fermentation occurs entirely spontaneously in stainless steel tanks and chestnut barrels, the same vessels in which the wine matures on its fine lees for six months before bottling, carried out without prior filtration or fining.\u003c\/p\u003e\u003cp\u003eIn the glass, Vite ad Ovest’s Grillo “Bayt” displays a bright straw-yellow color with golden highlights. The nose reveals pleasant aromas of white-fleshed fruit, citrus, and orange blossom, supported by evocative saline mineral nuances. On the palate, it is fresh, balanced,\u003cstrong\u003e and smooth, marked by vibrant acidity and minerality\u003c\/strong\u003e that accompany the finish.
