The cool and breezy climate, characterized by good temperature excursions between day and night and soils composed of precious clayey marls, create the optimal conditions for expressing the Burgundian grape variety at high qualitative levels. The grapes are harvested in September and the best bunches are sent for fermentation in temperature-controlled steel tanks.
