When producing a rosé, the choice inevitably fell on the most representative red grape variety of the Etna area. The Nerello Mascalese vines are cultivated on the southeast side of Etna, on soils composed of volcanic sands. After harvesting, the grapes undergo a \u003cstrong\u003ecold pre-fermentation maceration\u003c\/strong\u003e for 12 hours and then a soft pressing. The free-run must is then vinified in white in temperature-controlled steel tanks.
