The soils are mainly composed of silt and sand, poor in organic matter and often drought-prone, although the vine plants have learnt to survive these periods by pushing their roots deep underground to seek water. The grapes are harvested by hand, and once in the cellar, spontaneous alcoholic fermentation takes place with indigenous yeasts in steel.
