The old vines are cultivated on very steep slopes perfectly exposed to the south, ensuring many hours of light and perfect ripening. The area is located at an altitude of 100-150 meters above sea level and enjoys a temperate and always well-ventilated microclimate. The soils are composed of \u003cstrong\u003eloess rich in slate stones\u003c\/strong\u003e. The vines are managed with low yields and are hand-harvested. Fermentation occurs spontaneously with indigenous yeasts and a maceration on the skins of about twenty days.
