We are within a terroir characterized by a clayey and calcareous subsoil, where the winery exclusively follows \u003cstrong\u003ebiodynamic working practices\u003c\/strong\u003e. The bunches are destemmed and the grapes are gently pressed. The must ferments spontaneously thanks to the presence of indigenous yeasts in oak barrels, also undergoing malolactic fermentation here. It concludes with aging, initially carried out for \u003cstrong\u003e12 months in small oak barrels\u003c\/strong\u003e and then in stainless steel tanks for a period of 4 months.
