The splendid sunny exposures, the presence of the river, which acts as a natural thermal regulator, and the vocated soils composed of shale and clay provide a perfect habitat for bringing the red grape varieties to maturity. The grapes are started in the traditional red wine-making process, but fermentation is stopped before the Levites consume all the sugars by adding brandy to the must. The resulting wine increases in alcohol content while retaining residual sugar.
