In the winery, the same approach continues, with spontaneous fermentations and an extremely reduced use of sulfur dioxide. The Ribolla Gialla, the predominant grape in this classic method, shows all its potential and its refined saline texture. The extremely limited yield and adherence to numerous biodynamic principles are the prelude to fruits of extreme quality given the health of the bunches. After the harvest, which is carried out strictly by hand and involves sorting the grapes, destemming and the first spontaneous fermentation take place in steel containers, with a resting period on the fine lees of 1 year. The second fermentation occurs in the bottle, thanks to the addition of fresh Riesling must.
