In this area, the ancient volcanic soils—composed of sand rich in basalt rocks and iron-rich elements—provide the plants with the mineral resources necessary to thrive. The agave is harvested only when it has reached maturity and is capable of delivering great aromatic intensity. The precious heart of the plant is cooked in a stone oven, in accordance with the most ancient local traditions, and then ground in a mill before fermentation begins.
