Among the cultivated grape varieties, spread over about 9 hectares, the indigenous Biancame, also known as Bianchello, occupies a central position, alongside Sangiovese, Albana, Alicante, Aleatico, Chardonnay, and Sauvignon Blanc.\u003c\/p\u003e\n\u003cp\u003eThe Bottle Fermented ‘Zigara’ from Tenuta Ca’ Sciampagne comes from a blend of white and red grapes, the former planted in 1986 and the latter in 2009. The vineyards, rooted in \u003cstrong\u003eclay-limestone soils rich in minerals\u003c\/strong\u003e, are managed according to the principles of certified organic farming, with very low yields per hectare. The harvest is carried out entirely by hand, with careful selection of the bunches, and subsequently, destemming and crushing take place, which precede the spontaneous alcoholic fermentation in steel. The sparkling process follows the Ancestral Method, with bottle fermentation without the addition of exogenous sugars.
