The Frizzante Ancestrale 'Capsule Two' from the artisanal winery Bossanova is a bottle-fermented wine characterised by a vibrant and carefree beverage. The Bossanova winery is the fruit of the winemaking project of Nat Colantonio and Andrea Quaglia, partners who decided to change their lives driven by the call of the Teramo countryside. The productive foundation of this Abruzzo estate is the valorisation of the native Montepulciano and Trebbiano d'Abruzzo vines, cultivated through practices that are sincerely in harmony with nature. In addition, the vineyards benefit from the concomitant influence of Adriatic breezes and cold currents due to the nearby presence of the Gran Sasso.
Bossanova's 'Capsule Two' Frizzante Ancestrale is made exclusively from white grapes grown in accordance with the principles of organic farming certified on hilly terrain 250 metres above sea level. In the cellar, alcoholic fermentation is entrusted exclusively to the yeasts present on the berries and in the vinification environment, and when the fermentation process is not yet fully complete, the must-wine is bottled to perform the slight frothing according to the Ancestral Method.
Bossanova 'Capsule Two' Frizzante Ancestrale possesses a brilliant straw yellow hue. The nose unfolds on aromas of yellow-fleshed fruit, citrus peel, and delicate notes of white flowers. The sip is lively and very drinkable, with a bright freshness accompanying the citrus finish. This is a refreshing and lively bottle, perfect for convivial aperitifs on warm summer evenings, perhaps accompanied by appetisers such as vol au vent with salmon or crostini with creamed vegetables.
