The Grillo “Bio Vegan” from Cantine Nicosia is a fresh, savory, and fruity white. It is part of the collection of labels from an innovative line, created to satisfy enthusiasts who seek not only quality wines but also those resulting from production processes that respect the environment and biodiversity. Organic farming and minimal winery practices allow for the proposal of a white wine of great expressive purity, capable of highlighting the best varietal characteristics of the grape.

The “Bio Vegan” Grillo from Cantine Nicosia is produced with grapes from vineyards cultivated on medium-textured soils, predominantly clay-based. The dry and breezy climate, mitigated by the presence of the gentle sea breezes, allows for the maturation of grapes with very rich aromas. The management of the vineyards is carried out with full respect for the natural environment. Between the rows, the principles of nature-respecting agriculture are applied, using only sulfur and copper in low quantities. The grapes are hand-harvested between the end of August and the beginning of September. At the end of soft pressing, the fermentation phase begins, which takes place in stainless steel tanks at a controlled temperature of 15-18 °C. The wine matures in steel tanks for a few months and completes its aging in the bottle.
