Nychteri Sigalas 2021

The Nychteri by Sigalas is the quintessential white wine of Santorini, produced from overripe Assyrtiko grapes and fermented and aged in old oak barrels for about 30 months. A white wine that combines the mineral personality of Assyrtiko, the historic grape variety of Santorini, with the soft, elegant, and seductive notes of fermentation and aging in barrels.

A white wine with a long aging potential that, in the tradition of Santorini, was meant to develop oxidative phenomena during aging, making it almost resemble a Sherry. Today, Domaine Sigalas has preserved the characteristics of Nychteri, renouncing some of these oxidative phenomena, to obtain a more elegant and seductive wine that presents itself in the glass with a beautiful golden yellow and immediately offers broad and complex aromas where the typical citrus nuances of the Assyrtiko grape play with hints of ripe yellow fruit, always maintaining that minerality and freshness that characterize this grape.
