The Pinot Bianco “Eichhorn” from Manincor is an elegant blend of freshness, sapidity, and refinement. Or rather, a sort of unusual synthesis of the Alps and the Mediterranean, as suggested by Count Michael Goëss-Enzenberg, the owner of the Manincor estate. He describes this Pinot Bianco as a wine that “is bright and has floral fragrances reminiscent of alpine meadows, but is also persistent and aromatic like the sea.” A perfect and incisive description that summarizes in a few words not only the personality of this wine but also the production philosophy of the winery. Nature and its preservation are Count Michael's aspiration, which is why he has long decided to convert his production to organic and to work according to the principles of biodynamics. The goal is to create a harmonious unicum between man, environment, and wine.

“Eichhorn” is made from Pinot Bianco grapes from the vineyard that bears the same name as the wine. It is located at the Leiben Aich estate in Terlano, characterized by sandy porphyry soil of volcanic origin and a warm microclimate. Once harvested and destemmed, the grapes are left to macerate in the press in the presence of the skins, thus enriching itself with aromatic complexity and structure. Part of the subsequent alcoholic fermentation takes place in wooden barrels; the entire process is carried out by the action of indigenous yeasts that characterize the wine in an extremely territorial way. The same yeasts will accompany the aging of the wine in oak barrels for four months.

The color of this Alto Adige Pinot Bianco is bright yellow. It opens on the nose with aromas of ripe apple and white flowers, revealing a mineral trail reminiscent of wet limestone rocks in the background. On the palate, it shows its elegance through a interweaving of sapidity and freshness that, together with a fruity memory, extends the persistence. The finesse of Alto Adige whites blends with the tradition of the Manincor family, giving rise to products that are as expressive as they are delicate.
